If you’re like most of us during the holidays, chances are you’re planning to head out in your RV and visit a ton of friends and family. After all, what’s better than having your home with you wherever you go? It’s also pretty likely that you’re planning to bring along some sort of delicious treat to all those Christmas and holiday events you plan to attend. This egg nog fudge recipe is super easy and something that travels wells and stores for quite a while, which means you can make large batches ahead of time (just try not to eat it while it’s in the freezer).
Egg Nog Fudge
- 4 cups of sugar
- 1 stick of butter
- 1 1/2 cups of Egg Nog
- dash of salt
- 1 teaspoon of Rum extract
- 1 teaspoon of Nutmeg
- 7 ounces of marshmallow crème
- 1 1/2 bags of Ghirardelli white chocolate chips
To whip up this recipe you’ll need a large saucepan. The heavier the better because you’ll also be doing a lot of stirring. In your saucepan combine sugar, butter, egg nog, and salt. Allow to boil until it reaches 225 degrees on a candy thermometer. Stir constantly to avoid scorching. Once the mixture reaches 225 add the run extract, nutmeg, marshmallow creme, and chocolate chips. Stir until all ingredients have combined completely.
Pour into a progressed 8″x8″ square pan. Sprinkle nutmeg for garnish if your wish, then let it cool and serve.
To add a little pizazz to this you can cut into squares then package nicely in a confectioner’s box and tie with a lovely bow. Another great option, if you aren’t traveling to other people’s homes, is to mail these as gifts or keep some on hand to share with people you meet at the campground.
